THE ROASTS
There are many roasts that are offered. Coffee from all over the world will be its best at a certain roast. Cafe Para la Vida Digna is currently has 4 roasts, Full City, Vienna, Dark Vienna and French. Everyone has their favorite. So try them all.

CUPPING
Cupping is a term for tasking the coffee and basically scoring it. Cupping is critical as is how we determin the best roast for the coffee bean.
HOW TO MAKE COFFEE
In general, coffee makers are not created equal. So everyone will need to experiment with their own coffee maker at home to determine the perfect amount of coffee for a set number of cups of coffee.
Starting Point
As a staring point use 3 tablespoons (actual) for each 4 cups of water. \
GROUND VERSES WHOLE BEAN
Most people are used to buying coffee that is already ground. Although this is convenient and probably taste good, coffee actually taste is best when you grind the bean as you use it. Plus the flavor is preserved better and longer while it is still a whole bean. So this means you will need to get a grinder.
GRINDERS
There are two types of common grinders; a Blade grander and a Burr grinder. The Blade grinder is more affordable and does the job very well. The Burr grinder is considered better because it crushes the bean most evenly. This is a preferred result however it comes with a higher price tag.
COFFEE SHELF-LIFE
Coffee in general is just fine so long as its consumed in 30 days, however Specialty coffee holds its peak aroma and flavor its first 14 days after roasting. Thereafter it begins to slowly lose its peak. However most of us do not notice unless we are really in tuned to our coffee.
If you are wanting to maintain that peak flavor, the solution is easy. Buy only one pound at a time. If you do not consume a pound two weeks, then buy half a pound at a time. Basically, if it matters to you, try to buy your coffee weekly or biweekly. Doing this guarantees peak freshness.
Remember, if you want to maximize your peak flavors, grind it daily. Also, keep your coffee out of the sun and heat.
p.s. Coffee commonly tastes good even after 6 months. So don't let these words worry you if you have some old coffee in your house. Just brew it and compare it to fresh coffee. Be the judge yourself.
